You can't beat the classics, and a good sausage casserole is definitely up there. If you're short on time during the week, it's even better, since it can be made in the slow cooker while you're out at work. One recipe shared by foodie Bored of Lunch on TikTok uses one key ingredient that's 'so underrated' but makes for a very comforting meal.
The recipe developer, whose real name is Nathan Anthony, is known for his super-simple air fryer and slow cooker recipes that are perfect for busy families on a budget.
His hearty and warming sausage casserole requires minimal prep and can be made in the slow cooker in just a few hours, so it's perfect for throwing together in the morning so that you can return home to a delicious homemade meal.
In the casserole, he's used baked beans - an ingredient he says is 'so underrated' but makes the casserole so much more delicious. Other than that, you'll just need some sausages and a few other pantry staples, and you're good to go.
Here's how to make this recipe at home.
Ingredients (serves four)
- 12 sausages
- One red pepper, chopped
- One white onion, chopped finely
- Tsp paprika
- Tsp dried mixed herbs
- Two tbsp tomato puree
- Tsp garlic puree
- Tbsp Worcestershire sauce
- Two 400g tins of baked beans
- 150ml chicken stock
- Salt and pepper
- Mashed potatoes and fresh parsley to serve
Method
This recipe couldn't be any simpler to make. All you need to do is pan-fry your sausages until browned, then transfer them to the slow cooker along with all the other ingredients.
Then, set it to cook on high for three to four hours or low for seven to eight hours. Nathan recommends serving with some creamy mash on the side, and a garnish of fresh parsley.
